Strawberry Creme Cake

1 strawberry cake mix
11 1/2 ounces strawberry nectar
3 eggs
1/4 cup oil
1 pound strawberries, cleaned
1 cup strawberry jam
16 ounces strawberry frosting

Butter and flour two 9 inch cake pans. Combine cake mix, nectar, eggs and oil. Beat for 2 minutes. Divide between two pans. Bake at 350° for 20-25 minutes. Cool 20 minutes, invert cake and cool completely.

Thinly slice all but one (for topping) of the strawberries (1-1/4 cups). Cut each cake layer horizontally in half, forming 4 layers. Place 1 layer cut side down on serving platter. Spread with 1/3 cup jam. Top with sliced berries. Top with second layer, cut side down. Repeat jam and berries. (Reserve several for topping.) Continue with other layers (do not top last layer). Spread frosting on top and sides. Decorate top with one whole berry and arrange sliced berries to decorate as a flower. Chill.

I have made this for several showers and everyone loved and wanted the recipe. No one can believe how easy and that it all began with a mix and canned icing!



Creamy Egg Custard

4 eggs
1/2 cup sugar
1 pint half&half
1/2 cup milk
1-1/4 teaspoon vanilla
1/4 teaspoon nutmeg
1/4 teaspoon salt
Unbaked deep dish pie shell

Prebake pie shell for 10 minutes. Mix all ingredients well. Pour into prebaked pie shell. Bake at 350° for 50 minutes.

Fried Pineapple Pie

1 cup sugar
3 tablespoons cornstarch
1 large can crushed pineapple
(do not drain)
10 count jumbo biscuits

Cook sugar, cornstarch and pineapple slowly until it thickens. Flatten buscuit. Place pineapple mix on biscuit. Fold over to create pie. Fry like any other fried pie.

Lemon Pound Cake

1 box lemon supreme cake mix
1 box lemon instant pudding mix
1 cup sour cream
1/3 cup Crisco oil
4 eggs

Mix all ingredients as listed. Pour into tube pan that has been sprayed with Pam. Bake at cake mix recommended temperature for 40-45 minutes until it test done. Let set in pan for 5 minutes. Remove from pan.

Glaze

Powered sugar
Milk

Mix together and drizzle over cake.

Very moist and good.


Company Pie

1 can Eagle Brand Milk
1/2 cup lemon juice
1/3 cup pecans, chopped
9 ounces whipped topping
1 small can coconut
1 large can crushed pineapples (do not drain)
2 graham cracker crust pie shells

Mix ingredients. Pour into pie shells. Chill before serving.

It freezes well.


We had some responses to our recipe request for May. (Of course, since one was Winston Co., we had to put in a new one from Mrs. Marjorie!) They all look great! Keep up the good work!
