1 cup butter or 1 stick margarine
1 cup graham cracker crumbs
1 cup coconut, shredded
1 cup chocolate chips
1 cup pecans, chopped
1 cup sweetened condensed milk
Melt butter and pour into a 13x9x2 inch cake pan. Pour graham cracker crumbs over melted butter. Generously sprinkle (in order) coconut, chocolate chips and pecans, over butter and graham cracker crumbs. Pour milk on top. Bake at 350° for approximately 25 minutes, or until top begins to lightly brown. Allow to cool thoroughly before cutting into squares.
Pecans! Not Just For Pies
1 navel orange
2 tablespoons Marsala or sweet sherry
2 tablespoons sugar
1/3 cup sugar
1/4 cup coconut, shredded
3 egg whites
1/8 teaspoon salt
Peel grapefruit and orange and cut into sections. Halve the sections, crosswise. Put in a shallow bowl and toss with Marsala and 2 tablespoons of sugar. Set aside for 30 minutes.
Turn on broiler. Beat egg whites with salt and 1/3 cup sugar until peaks form. Drain fruit. Put into a 9-inch pie plate in one layer and toss with half the coconut. Spread meringue over fruit, sprinkle with remaining coconut. Put pie plate under the broiler as far away from the heat source as possible. Broil 1 to 2 minutes or until lightly browned. Turn if necessary to brown evenly. Serves 4 to 6.
Cherry Chocolate Blooms
1 cup powdered sugar
1 cup butter, softened
2 teaspoon maraschino cherry liquid
1/2 teaspoon almond extract
3 drops red food color
1-1/2 cups flour
1/2 teaspoon salt
1/2 cup maraschino cherry
48 each candy (chocolate)
Heat oven to 350°. In large bowl, combine powdered sugar, butter, cherry liquid, almond extract and food color; blend well. Lightly spoon flour into measuring cup; level off. Add flour and salt, mix well. Stir in cherries. If necessary, cover dough with plastic wrap; refrigerate 1 hour for easier handling. Shape dough into 1 inch balls, place 2 inches a part on ungreased cookie sheet. Bake for 10 to 12 minutes or until edges are lightly brown. Yields 4 dozen cookies.
