Food Celebration!!!


 

Key Lime Cake

1 box lemon cake mix
3 ounce package lime jello
1 1/2 cups orange juice
1/3 cup oil
5 eggs
3 tablespoons confectioner’s sugar
1/2 cup key lime juice

Mix together first five ingredients. Beat 2 to 3 minutes at medium speed. Pour into three prepared cake pans. Bake at 350° for 20 to 30 minutes until cake tests done. Mix sugar and key lime juice. While layers are hot, divide and drizzle with mixture. Cool.

ICING:
16 ounces whipped topping
1 can condensed milk
1/2 teaspoon vanilla
1/4 to 1/2 cup of key lime juice*

Combine ingredients in mixer on low to medium speed. Ice cake layers when completely cooled. Store in the refrigerator.

CARAMEL PECAN SAUCE

1/3 cup margarine
1/2 cup sugar
1 cup light corn syrup
1 egg
1 teaspoon vanilla
1 cup pecans, toasted and chopped

In 1-quart saucepan, combine all ingredients except pecans. Cook over medium heat, stirring constantly, until mixture comes to a boil (6 to 8 minutes). Just before serving, stir in pecans. Serve over ice cream or cake. Yields 2 cups.

Blueberry Salad

2 boxes grape jello
1 1/2 cups water, hot
1 can blueberry pie filling
1 can (small) crushed pineapple
8 ounces cream cheese, softened 
1 container sour cream
Pecan, chopped

Mix first four ingredients together. Pour into pyrex dish. Let jell. Combine cream cheese and sour cream. Spread over jelled mixture. Sprinkle with pecans.

Basic Catfish Coating

3/4 cup cornmeal
1/4 cup flour
Salt, pepper, onion powder, garlic powder, cayenne pepper to taste*

Combine all ingredients. Coat catfish with mixture. Pat to help mixture stick. Coats about 1 pound of catfish.

*Any, all or any other spices that you prefer
