Make a Date
 With Your Sweetie

 

2-Minute Fudge

1 pound powdered sugar
1/2 cup cocoa
1/4 teaspoon salt
1/4 cup milk
1 tablespoon vanilla extract
1/2 cup butter
1 cup nuts, chopped

In a 1-1/2-quart casserole, stir sugar, cocoa, salt, milk and vanilla together until partially blended
(it will be too stiff to blend thoroughly). Put butter over top in center of dish. Microwave at high for 2 minutes, or until smooth. If all butter has not melted in cooking, it will as mixture is stirred. Blend in nuts. Pour into a lightly-buttered 8x4x3-inch dish. Chill 1 hour in refrigerator or 20-30 minutes in freezer. Cut into squares. Makes about 36 squares.

This is a quick and easy fudge recipe and it is good!!! Hope you enjoy this one.
Editor’s note: Try adding miniature marshmallows, peanut butter or caramel pieces with the nuts for an extra treat!


Lone Star Citrus Guacamole

1 red grapefruit
2-3 tablespoons onion, minced
2 large ripe avocados
1/2 teaspoon salt
2 tablespoons sour cream
1/2 teaspoon garlic powder

Peel and section grapefruit, reserving 2 tablespoons of juice. Measure 1 cup of sections; cut into bite-size pieces and set aside. Peel avocado; mash with a fork, leaving some small chunks. Add remaining ingredients and stir. Gently fold in juice and sections. Serve or cover and chill. Makes 3 cups.

Fruit Salad

1 can mixed fruit, drained
2 apples, diced
2 bananas, sliced
1/2 cup nuts, chopped
1 cup sour cream
1 cup mini marshmallows
1/2 cup coconut, flaked
1/2 cup cherries

Combine ingredients. Chill and serve.

Banana Salad

1 tablespoon flour
1/2 cup sugar
Dash of salt
1 egg, beaten
1/2 cup water
3 tablespoons vinegar
2 tablespoons butter
4-6 bananas
Peanut butter

In a small saucepan, mix all dry ingredients together. Add egg, water and vinegar. Cook over medium heat. As mixture begins to warm, add butter. Cook until mixture is thickened. Place in refrigerator to cool.

Slice bananas longwise and spread with peanut butter. Put bananas back together and cut into chunks. Spread mixture over bananas.

Hash Brown Casserole

10 ounces frozen hashbrowns
1 tablespoon dried onion flakes
2 tablespoons dark corn syrup
1 cup Colby cheese, grated and divided
1 can cream of chicken soup

Mix all ingredients except 1/2 cup of cheese. Sprinkle remain cheese on top. Bake at 350° for 30 minutes or until brown.
